Oatmeal Raisin Cookies
The first recorded recipe has been appeared in 1896 with created by Fannie Merritt Farmer on her cookbook. #oatmealraisincookies#
Preheat your oven for 350°F.
2 sticks of Unsalted Butter, room temperature
¾ cup of Firmly Packed Light Brown Sugar
¾ cup of Granulated Sugar
2 large Eggs, room temperature
1 teaspoon of Pure Vanilla Extract
1½ cups of All Purpose Flour
1 teaspoon of Baking Soda
1½ teaspoon of Ground Cinnamon
½ teaspoon of Kosher Salt
3 cups of Quick or Old Fashioned Oats
1 cup of Sun-Maid Natural California Raisins
In a large bowl, combine the butter, both sugar, cream it together until light and fluffy. Add in the eggs, then beat well incorporated, and make sure to scrape down the sides of bowl and the bottom occasionally using a rubber spatula. Put in the extract of vanilla, then keep going, and set it aside for later. In a separate bowl, combine the flour, baking soda, cinnamon, salt, then the oats, and stir around. Add the dry slowly, little by little to make a nice soft cookie dough. Gradually add in the raisins, and fold it in the dough. Now, you want to spoon the cookie dough onto the cookie sheet lined with parchment paper for easy clean up using a large ice cream scooper, form into ball, break it in half, roll each half into another ball with your hands, place it back on the cookie sheet, then flat it down to firm into a patties, and repeat. Next, you want to put it in the oven to bake for 15 minutes until golden brown. After 15 minutes, take it out of the oven, transfer the cookies on the cooling rack, and let it cool at room temperature for 20 minutes before put it on the serving platter.
Tip: Store the cookies into a jar or a Tupperware container, then put some slice of bread on the cookies to keep it soft, and close it very tight before next day.
And here’s the finished Oatmeal Raisin Cookies.
