Lanzhou ramen, a characteristic food of Lanzhou City in Gansu Province, is a kind of food name, originally named Lanzhou beef noodle [1], which began in the Jiaqing period of the Qing Dynasty (1799). He was brought to Lanzhou by Ma Liuqi, a Dongxiang ethnic minority, from Chen Weijing, Qinghua, Huaiqing Prefecture, Henan Province. Later generations Chen Heisheng and Ma Baozai unified the standard of Lanzhou beef noodles with "One clear (soup), two white (radish), three green (coriander and garlic sprout), four red (spicy seeds) and five yellow (noodles yellow and bright)." In the later 200 years, it was famous for its bowl of noodles, its fresh rotten broth and fine noodles.
